I used to have a Siamese that acted like that as well. The other cat reminds me of the same cat watching Lassie on TV. Whenever she saw a bird flying on the show, she would try to chase it. I loved that cat.

I've had 3 cats that did that. 2 of them were calicos. one I have now is a maine coon. Every time she sees a bird out the window she does that. My previous cat started doing that when I used a pointer laser and pointed it at the ceiling. The one before that did that when I first started driving truck. She'd see birds outside the windshield. That's when I first started noticing that kind of behavior with cats.
