@MrPierrekim Maybe instead of getting the Korean radish you could use a lot of smaller radishes. In America, I have never seen a radish of that size before, if they don't have a difference in taste, I would use a mass amount of smaller radishes.

@kialxiong Not exactly. Paprika is bell pepper and not spicy, while red pepper is chili and thus spicy, but they're all variations just like muskmelons and honeydew melons - they're still melons.

This is awesome. My husband spent a year in South Korea and he misses the food. There is only one Korean restaurant in our area, but it's an hour away, so we don't get there often. I am growing cabbages in my garden this year and this will be a great way to preserve them.

@MsBananas602 It depends how you make it. if you like it really spicy, you can make it that way, but it doesn't have to be. Kimchi can be pungent, but you can get used to it :)
my question: if you rinse the cabbage 3 times (as i've also seen in other videos) wouldn't that remove the salt? don't you need salt in the brine to properly pickle the kimchi? this looks like a recipe for disaster - adding a bunch of ingredients together and allowing it to rot. does leaving the salt in the cabbage for 2 hours impregnate it with enough to allow it to ferment? confused.
First your videos are amazing. Well executed and explained! I started cooking Korean because I craved it so much. I had Korean roommate in college. Where I live we have many Korean restaurants but not very good. Only Toronto, I have found restaurants comparable to Korea. It is only when I visit there I eat out Korean. I do have one question, why do you not add fresh oysters? Is this another form of kimchi or different variation? I've subscribed keep up great work!

@peacefulnature10 When I first learned to make kimchi I was told that the sugar was crucial because it helps feed the bacteria which aids in the fermentation process. It is not that much though. Maybe Mrs. Kim may recommend adding more fruit perhaps.
@dolcemaddalena Thank you for your reply. I assume sugar is important for fermentation, however I have seen official recipes with no sugar. I am just wondering - how did they do it in ancient Korea before the sugar became available? What did they use - natural honey? Thanks again! @peacefulnature10 I am not Korean so I am not so familiar with the ancient cooking traditions. I remembered when my roommate's mother showed me how to make kimchi. She used probably about 1/2 cup sugar. But the recipe was HUGE. I mean she used about 10 cabbages. The amount was not that much really. If you cannot have real sugar I would suggest adding maybe a whole asian pear instead of half. The pear has natural sugars, more than apples. Don't use sugar substitute bc it will not work.
@DowntownClown69 I stored the kimchi in room temperature overnight and in the fridge the next day. I'm living in Singapore. The weather can be quite humid and hot. I think it tastes real good from the third day onwards..

my question: if you rinse the cabbage 3 times (as i've also seen in other videos) wouldn't that remove the salt? don't you need salt in the brine to properly pickle the kimchi? this looks like a recipe for disaster - adding a bunch of ingredients together and allowing it to rot. does leaving the salt in the cabbage for 2 hours impregnate it with enough to allow it to ferment? confused.

First your videos are amazing. Well executed and explained! I started cooking Korean because I craved it so much. I had Korean roommate in college. Where I live we have many Korean restaurants but not very good. Only Toronto, I have found restaurants comparable to Korea. It is only when I visit there I eat out Korean. I do have one question, why do you not add fresh oysters? Is this another form of kimchi or different variation? I've subscribed keep up great work!

I cannot have sugar. Is it possible not to add sugar? Can I use something else instead of sugar? I have seen kimchi recipes with no sugar. Do I need to change the amount of red pepper if I do not add sugar? Thank you very much. Kamsahamnida.

@peacefulnature10 When I first learned to make kimchi I was told that the sugar was crucial because it helps feed the bacteria which aids in the fermentation process. It is not that much though. Maybe Mrs. Kim may recommend adding more fruit perhaps.

@dolcemaddalena Thank you for your reply. I assume sugar is important for fermentation, however I have seen official recipes with no sugar. I am just wondering - how did they do it in ancient Korea before the sugar became available? What did they use - natural honey? Thanks again! Or, and do I have to leave it on the counter top to ferment first at room temperature or can the fermentation occur in refrigerator as well?

@peacefulnature10 I am not Korean so I am not so familiar with the ancient cooking traditions. I remembered when my roommate's mother showed me how to make kimchi. She used probably about 1/2 cup sugar. But the recipe was HUGE. I mean she used about 10 cabbages. The amount was not that much really. If you cannot have real sugar I would suggest adding maybe a whole asian pear instead of half. The pear has natural sugars, more than apples. Don't use sugar substitute bc it will not work.

@DowntownClown69 I stored the kimchi in room temperature overnight and in the fridge the next day. I'm living in Singapore. The weather can be quite humid and hot. I think it tastes real good from the third day onwards..

Hi, what is the difference between the whole cabbage and the cut cabbage for kimchi making ? Does it taste different or the cut cabbage is just an easier way to handle ?
