@FaadumoArdo yes you can. I would recommend to google for 'basboussa' recipes you'll find plenty without coconut. This one is particularly for coconut, so if you omit it, you'll have to replace it with the semolina.
@cookingwithalia you know, I did the cake 2 times. One exactly as you did it, with coconut and the other time I didn't have any coconut so I added a little more flour and some walnuts. But it came out so hard, not fluffy. I think the coconut is the best.

@kawaietbelle It will still taste good, but not the best. It might lack flavour, so it might just taste like bread and sugar. Why not substitute a teaspoon of vanilla extract? It might give a cookie type flavor.

The almond extract, coconut flakes and the rose water go really well together creating a very unique taste and aroma.
FYI to those who haven't made it yet....let it crisp up a bit on top, bake it till it really is golden brown. The browning brings out a very good taste that goes so well with the very moist and aromatic middle.

I would also like to suggest that you have a list of ingredients so that we don't have to continually go back to the beginning to figure that out. good work but one thing to add, in egypy we do basbousa with yougert not milk and the cold surp should add right after we take it out from oven. last thing egyptain basbousa is kinda thin some people don't even add bking powder
