don't think you watched good pruning. this is comercial trees where people only care for productivity. trees can be cut better. but it takes time and they don't have it.
Hermbu you are correct, these are commercial olive trees and things are done a bit differently in the commercial olive world, especially in the world's largest olive garden, Andalucia, Spain But everyone should have access to information about olives if they wish. Thanks for your comment!!!
