Hey! I've tried this new thing out. With XVid CAP screen capture you can record your desktop. It may seem laggy while recording, but the video runs very smoothly. You should really give it a try, BTW it supports MPG and AVI formats, so you won't be needing to use mencoder.
Yeah... I know exactly that sort of problem, eventhough it does not get as laggy in mine. Probably you should try using gtk recordMydesktop instead of ffmpeg. It comes with Ubuntu's repositories.
