@broodm You may want to Google "sous-vide" before you conclude that restaurants couldn't possibly do this. Obviously they use a commercial vacuum sealer rather than a vacuum cleaner, but we didn't really want to say "OK, now spend £2000".

@broodm THere's a really good guide to sous-vide online - search for "Practical guide to Sous-Vide".
Most restaurants will be using lab water baths accurate to +- 0.1C - that's what I use these days. And most of them use "cook-chill" - sous-vide, rapid chill, then reheat for service. Sounds a bit icky but works really well.

Fun video! I would put a pot of cold water and a pot of boiling water beside the actual bath. That way, if the temp goes astray like in the video, you can quickly rebound.

the alternative is to flip the steak every 15 secs, for about 12-16 flips (4-6 mins). Every time you flip the steak the part that does not meet the pan gets cooler, so you can achieve internal temperature of 55-60 C with a crispy outside

Anyway - it's a factor of temperature against time. The FDA specifies a minimum temperature of 54.4 (for a VERY long time) to kill all foodborne bacteria - 55 is a bit higher, so takes a bit less time.
