  • That is exactly how you clean a Striped Bass. You have to remove the red meat, or they taste gamey. If you like that fishy taste, then leave it on. I have never met a single person that actually likes it though. It does reduce the amound of good meat that is left. But that is the reality of it. Some people just gut them and use the whole fish, head and all for stock. No waste there but really, who eats that crap?

    You need to catch a bunch to get a lot of meat but he did it correctly.

  • instead of chopping all the dark meat away I leave it on when cooking it it comes right off, so it's better than cutting all this away, and you save more white meat

    You catch the fish and right before you throw it in were ever your keeping it

    you grab a knife you make a cut across the bottom of the neck all the way threw and bleed the fish. Your problem is solved no more wasted fish all the blood is out. i do this with all my fish nice white meet all the time.

  • I realize you have to get rid of the blood. I had the same problem up here in Canada with Pike. Then 2 russians showed me what to do.The head,centre bone and its meat thrown away makes an incredible soup. Get rid of any guts or gills and boil with an onion and spices like fresh dill and parsley for 20 minutes then strain, keeping fish. You will have an amazing stalk. Then add the fish back in ,potato, a little barley and chunks of 2 other species of fish. Simmer 10m

  • I don't really use my electric knife unless I have to clean 10 or more cat fish. I just like to fell my blade run through my fish and it looks really clean. Not saying eclectic knifes make fish look bad just not as clean as a filet knife blade...

  • Nice work! I haven't eaten but one of these and I did not remove the darker meat as you did so masterfully! Some of the old guys had told me the strippers were good to eat, as long as the darker meat is removed! Antone else saying different must not be fisherman!

  • I cut the whole filet out then cut around and remove the ribs. Get some more meat that way. In any event, not bad.

  • Little Tip. Leave the skin attached and then just flip it, Then you don't have to try to catch a tip of the skin to take it off

  • not necessarily some areas have special health advisories for the consumption of certain sportfish. for example where i am from most of the Long Island Sound has a 1 meal per month advisory for striped bass and bluefish for PCB's

  • Dude, just ignore the assholes here... thanks for the video. I was looking for something to justify buying one of these and now I have it. I fish for catfish a lot and most of the filleting is very easy with them... but they do have the same layer of subcutaneous fat that tastes like shit and carries a lot of toxic material.

    Seeing how easy one of these electric knives makes removing that layer of nasty really makes me want one bigtime!

    My only suggestion is to not complete the cut at the tail, but rather flip the fillet over. This enables you to use the carcass as a "handle" when removing the skin and blood layer. I agree with previous poster about staying up off of the skin. Perhaps go with a regular knife for final trim.

    Perhaps you can offer the bloodline, etc. to those who want it. They probably wouldn't care if it were frozen either!

  • i'm a proffesional filleter and i fillet from 05.30 to 15.30 6 days a week so i do this quite a bit. one tip for the blood layer is what we call final cut. when skinning, you want the knife to skim about 2mm off the ski leaving blood on the skin.

    one thing i allways do when filleting white bass or hybrids is i leave a bit of meat on the skin to help with the red.

  • As I mentioned before, these fish have blood lines that are very unpalatable and need to be removed, leaving less eatable meat than other fish. I enjoy eating fish that I catch. I practice "releasing" by not eating fish in restaurants which are caught and processed much less humanely and without my effort.

  • Actually that's the ONE reason why I would actually buy one of these knives in the first place. That "red meat" you refer to is subcutaneous fat and aside from having a _terrible_ taste, it's where most toxins absorbed by the fish are stored. Lots of toxins like PCBs, mercury, and so on, are fat soluble and stored in the fish's fatty tissues.

    Removing that crap isn't wasteful, it's important both in cooking tasty food for yourself and not poisoning yourself.
