When your in a plane spinning down towards the earth at 500mph you have no way to tell which is up and which is down; if you eject while the bird is top down.. well lets just say alot of pilots have been killed that way

First, this was a low-speed demo! Second, ejections seats have stability gyros that right the seats...things have progressed in the last 50+ years. Zero/Zero seats (i.e. zero airspeed/zero altitude) as long as your sink rate is within the specified parameters for the alitude in which the attempt is made.
