tht's right! that skin is GREAT BURNT! As long as the meat inside is juicy and tender, u get the best of both worlds. most ppl love burnt skin and not just carmelized. good video. thnx
I'm giving this a shot in a couple of hours. The foil I think is the element I've been missing because I've had some trouble in the past getting them cooked all the way through.
This is a good recipe, but it would benefit it so much more if a real grill was being used. What I mean by that, is using a charcoal grill and indirect heat.
No offense meant towards Jack though. This is a good recipe. It's just, for me, a gas grill is nothing more than an outdoor oven. IMO your not truly grilling if your not using charcoal or some sort of wood. I crisp the skin over the flames and cook the chicken with indirect heat. No foil needed.
for you that call that burnt must not know much about cooking. yes there is a fine line in burnt and caramelized. but that didn't fall under burnt. by the way nice tongs where can i find them at? i don't use a fork on anything.
That's a good question. I haven't had much luck with BBQ utensils. I bought Weber gear when I got the grill and I haven't been thrilled by them. Pretty much anything that's not too flimsy or lets too much heat travel up the handle. Let me konw if you find something good!
I have done the same thing with ribs and it works pretty well. I still prefer my ribs slow smoked. One of these days I'll put that video up. Glad the technique worked for you. Keep grilling!
Heartajack, I dunno, but alot of these ppl maybe have never really enjoyed american (esp southern) bbq'd chicken!! This ain't McDonalds folks!! Not everything in life HAS to be pretty or orderly upon inspection to be super freaking delicious!! I'll call it burned, charred, carmelized, what have you, its tastey!!!
One again sarcasm slips by the masses... All I can say is caramelized or burnt, it tastes great. The meat is juicy, falling off the bone, and the flavors are awesome. The grill timing will vary. Take the chicken off the grill sooner if the color concerns you too much. Thanks for the comments.
The word you're looking for is caramelized. Burnt is such a derogatory term and has such negative connotations. I'd hate to think you were just posting unhelpful comments just to make people pay attention to you. That never happens on YouTube. Shit! I just justified your comments. Damnit! I suck.
Dam you BBQ too, wow! Another I must try. So tell me, charcoal or propane? What does the "chef" prefer? (I noticed you are currently using propane - nice grill!) I think you should have mixed up a stiff drink to help with the blazing heat of the Reno day! Keep the shows coming!
NICE! You BBQ too, wow! I cant wait to try this one out, but I must ask -- propane or charcoal? What does the "chef" prefer (could not help but notice you currently use propane)? Keep 'em coming! You needed a solid drink to help with the heat of the day!
For cying out loud hurry up with Episode 4. I'm starving my ass off. Great recipe! I tried it, and it was really excellent. Really slides off the bone... so to speak.

Dude wash your hands immediately after handling raw chicken for your own health and those in your household. Your tinfoil box is covered in germs!
