The thing is, you can place blocks, not in the air, but backwall. In the undergroynd levels there is no backwall, the sky is just dirt with stone or stone or magma thibgy in hell. You can put backwall there, so you can have like a city underground. You should read wiki a little :)

Excellent mushroom farm design. Trim grass regularly. Very nice and should help you quite a bit as you can eat them raw, make health potions, or add to goldfish and a bowl at a cooking pot to make a bowl of soup that will boost all stats a little bit for 10 mins.
The 720p resolution is a good change too. Much easier to see things.
Undead miners are worth killing if you see one as they drop a lot of copper coin as well as bombs, with a very rare chance of a hook.

Get some sand from the desert and smelt them into glass, glass into bottles, and 1 bottle you place on a table with makes a "alchemy" table where you can make all the potions, health potions etc etc... And collect some dayblooms with their seeds and combine them with the glowing mushrooms in the caves, its pretty easy and it makes you glow!
More houses for more npcs, mushrooms dont spread, you were right in the end... keep clearing out the grass/flowers/mushrooms, you can only place blocks/platforms if there is a block right next to it. Unless you are in the top level (before the music changes and the background is all dirt)
for the mushroom farm... I would use your pick axe to clear the grass and stuff. and at the end of the first/third/fifth row make a drop to the next row. that way you can "corncob" your way down.
@hypnotizd you're going to want 2 very useful items. 1 a mining helmet. You have to first get a merchant (collect 50 silver and have a suitable living space). It may be expensive, but it's well worth it. 2 you're going to want a grappling hook. You make one with a hook (dropped by skeletons and piranhas) and 3 iron chains. ( they each cost 3 iron bars) I hope this helps ;)
I've only played terraria for like... an hour in a LP, ha. But, I was reliably informed by my friend that you can attract NPCs be building them a house that they can then lay claim to? There are certain criteria you have to fulfil to get them to come and own that house though. Like, it needs a fireplace, table, chairs...stuff. Not fully sure on details I'm afraid.
There are lots of other ways of making a mushroom farm,here are 2 types that I use: 1.make a 1 block tall tunnel, then a 3 block tall tunnel than a 1 block tall than a 3 block, and so on and so forth. This allows more places for mushrooms to spawn, but also gives space for vines. 2. You make a bridge high up in the sky made of dirt and you can get other items like stars and have a place to fight mobs as well. But this way requires grass seeds (bought from dryad, requires 1 boss kill).
Hypno could you do the terraria server where you play with select subscriber or few subscribers? Or you should play on a subscriber's server or something It would be quite nice in my opinion

It's my understanding that when you die, you lose coins. So that's the penalty for death. Also. the money -can- be used for shopping as you suspected. To get vendors and such and other NPC's you have to build houses. They have to have four walls, be a certain size, have a single door, and also other conditions, like cabinets or some sort of thing. i'm not entirely sure. I was in a livestream when two other people were discussing it, I wasn't part of the convo though.
mushrooms dont really spread. they just grow randomly on grass, but having a farm isnt a bad idea. also you might want to get some sand to make bottles and put one on your crafting bench. if you have mushrooms and bottles while your next to it, it will let you make healing potions :D
