INGREDIENTS: White Shoe peg corn Black beans Black pepper 1 tsp. Salt 2 limes 2 Avocados 1 Purple onion Red Wine Vinegar 4 Tomatoes 1/2 or 3/4 Cilantro Procedure: Get a big bowl to mix with. Drain the shoe peg corn and black beans and put it on the bowl. Finely chop 1/2 or 3/4 of the Cilantro ( choice to include the stem part). Cut Avocados, Tomatoes, Onions into cubes. Add 1 tsp salt, 1/2 tsp pepper, 2 tbsp Wine vinegar, 2 tsp olive oil. Mixed it thoroughly. Let it refrigerate overnight.
So I made some of this yesterday & I loved it. I didn't put avocado in it because I was afraid of it turning brown (yuck).. but I just add it in whenever I'm going to eat it. I put it in a toasted french baguette and it was great!

My brother's, dad and boyfriend LOVED it. i also put a can of Corn N Peppers in it,and earlier, when eating leftovers, I added some dabbles of sour cream and mixed it up and it was lovely.
I just wanted to you to know that I totally blame you for getting me hooked on this! I'm addicted! I make it all the time now, I actually prefer this instead of salsa now!
This is sooooo good! I just made this for lunch and its tasty right now, I cant wait until it has sat overnight. Im eating it plain in a bowl, this would be excelent over some baked chicken too. Thanks for the recipe!
this looks so good! my family actually makes something similar called "Mississippi caviar" using black eyed peas instead of black beans and italian dressing in place of the olive oil. Give or take.... and just like this one it's got to sit in the fridge or it's not as good.

With the limes, you can get a zester, (it is like a really tiny cheese grater) and just grate of the lime skin, and it has SO much flavour. You stop when you reach the whitey, green part. For 5$ it will become a staple tool in your kitchen. I worship mine!!
For the Cilantro. Put the tip of your knife on the cutting board and keep it down. Then just bring the back of the knife down and chop it back and forth with the tip down. It might seme a bit awkward, but it makes it faster, and more fine.
You might want to try to add basil, might be yummy.

if you take ur cilantro do it and section roll it up in like a tight cylinder and run ur knife through like that you'll get a nice chiffonnade
