African Americans were not the only influences on Gumbo, therefore it is not only an African American dish. @PharaohII if you don't want to read that book, why don't you look it up on any any search engine. Creole's where mainly French and Spanish when the term was used, so were the Cajuns. I am not saying that African Americans did not have their impact on the food, they obviously did (Black Creole's), but you have a lot of researching to do. African Americans were not the only influence on Gumbo or any other Creole or Cajun foods. Go look it up, and get over it.

I like the quick easy idea you have, guess it would depend on how much time I have. I'd much rather spend 30 mins cooking up the rue and adding to it, rather than adding rue to the rest. I'll try your method however, like I said, I like how it is so much quicker.

You are right!. The word Gumbo means Okra in African. Not the roux. Gumbo is a stew! The star of this dish is the roux! The Africans did not create this alone. If they did, how did they come up with the roux? Without it, Okra alone can not thicken the dish. The three trinity alone can thicken up the gumbo! Why is Okra not part of the trinity? Frankly, Okra was put in for last minute garnish. Who could taste the trinity anyway? Roux, your favorite meats/seafood/poultry are your star!

While I'm sure it tasted good, that wasn't "gumbo", that was glorified stew. At least it is not Gumbo in my book. A real gumbo will have a roux that is the color of DARK chocolate, not "milk chocolate" or the lighter stuff you had.
The word "gumbo" comes from the African term for okra, "gombo,". So, if it don't have okra it ain't true gumbo. File' (ground sassafras leaves) was used as a substitute when okra wasn't in season. Some people now use both. I could go on but my character limit is up.
Well, I'm sure with all the people cooking gumbo in Louisiana over there years, there were and are more than one recipe for gumbo. We've tried many, and this is the way we like it. We do always have okra in our gumbo by the way.
