That's only in Japan, since his japanese name is Kaabii, hence the Kirby anime in japan is called: hoshi no kaabii (Kirby of the Stars)

They do have the r sound, however it is sometimes pronounced more like an 'l' sound, since it might be more fitting for a character to speak as such.

It is used in names such as Reimu or Rumia, and the Japanese word for thunder or lightning: 'Rai' (as in 'Raichu' or 'Raikou')

Kirby is called Kirby in the English translation (as far as I know) as a little homage to a lawer who's surname was Kirby who helped Nintendo out with some legal trouble they were going to at some point. Not to mention Kirby is easier for an English speaking child to pronounce without trouble.
