Remember that power is finite and dictated by the maximum output of your engine while you can have as much torque as you want through gearing. So more power = more torque, end of story. The important part is getting the power delivery right, as in the case of those cars in that race.
The V-Strom 1000 isnt a bad bike and amongst the adventure bikes its probably the quickest (I think MCN did a comparison on the strip, but thats before the 08 R1200GS came out). There is little magic in V engines, they put out a bit more of their torque potential at lower revs but they usually have less max torque than equal capacity inline 4 engines thanks to lower compression ratios and what not. The gear ratios are what redeem adventure bikes in a drag somewhat. But still...

After about 80hp, 3 seconds is possible, but it's more about the rider, road and tires then the bike.
