Everybody complaining that it's not a dish from South America needs to stop getting uptight and stop interpreting things in such a narrow manner. South is being used as a descriptor to specify which part of America, like if they were to say East America, West America, North London, or South Wales.

Ok Ben, I'm sorry I'm often critical but I made this following the measurements on Sorted website and it calls for 800 ml chicken stock + the tomatoes. Now, clearly that is incorrect because just looking at my pot, I promptly added more rice (100g) but still ended up with a glop. In the video, you clearly put 500 ml stock, not 800 ml. It saddens me cause I'm sure some ppl were sad to fail at such a simple recipe. Sorry again for the criticism - love you guys! :)

While I'm sure that dish is fairly tasty, I wouldn't actually call that a jambalaya. Although, maybe I'm just picky....being from the jambalaya capitol of the world and all.....

I hate the texture of cooked onion, if I made this, could I cut up the onion smaller so it kind of disapeared? I don't mind the taste, just the texture.
@planton10 you can do... although we prefer it is you keep everything chunky and rustic. It will cook a little more if smaller and since you have to keep stirring it it will break them up. So unless you're trying the 'hide' the veg from unsuspecting fussy eaters then best to keep them large.

Made this today, but changed it alot - no celery, lots of mushrooms, courgettes and butterbeans, and didn't ctually add the rice to the pot (so I could freeze it)... and I don't know exactly what is was when I finished, but it was bloody lovely!

@echastain07 You don't have to put the shrimp in. When we make Jambalaya at my house, it's usually just a chicken and sausage jambalaya. And you don't have to put all the peppers and chile in. All of that is mostly extra.

also usually it is made with Crayfish which is like a small lobster, although it can be made with prawns like shown.

and i don't think their is a limit of what you can put in a jambalaya so void that.
