Good information. You sound hesitant and unsure of what you are saying. It's very much the way I would sound. Don't be so careful. Just go ahead and let it rip and make mistakes, it's what gives a video personality.

i would have heated up the roasting pan first then add the beef, let roast until they a nice brown.
