chocolates never go in the fridge nor freezer.

Put it in the fridge. I've frozen my molded chocolates in the past, but they wind up tasting slightly off.

If Jacques Torres says to put it in the fridge, then put it in the fridge. He's a chocolate master and has been for years.

I've made chocolates in molds like this before, but ours were really ugly, haha.
We had lots of silly colors, like lavendar and bright red, haha.

Great chocolates but I could care less about the accent. I never understood why people like the French accent..it's like any other accent, big deal.
Anyway Mr. Torres makes many tasty items. His stores with the open factories are adorable and smell very good.

Jacques should branch out more - he could be the heir to the title of that other Jacques (Pepin)! It's great to see foodie "celebrities" that are actually skilled artisans, not just hyped personalities like Rachael Ray, Bobby Flay, Emeril, etc.
