Vacuum hardware is susceptible to leaks, regardless how good your equipment may be. Vacuum bags can have small pinholes, often found at the intersection of wrinkles, or vacuum ports can leak backwards into the pump once the pump is turned off. Manufacturers will often quote an acceptable leak rate, say, one inch of mercury loss per minute, or something like that. we leave our pumps running to maintain the vacuum within that acceptable loss tolerance.

Why leaving the pump 24h on? once it's under vacuum and you close the vacuumline, so that the vacuum stays in the bag its enough isn't it?
