@soofunnny : You can use a fine shredder or we have a food processor that does fine shred and we used that ;)

I love beets, try my version of this salad by adding olive oil, instead of cilantro I use fresh dill and parsley, walnuts instead of peanuts, fresh lemon juice and I chopp my beets, sometimes I add chopped hard boiled eggs if I want to make it into a hearty salad. try my version, let me know how you like it, you will not be disappointed.

This is a good looking recipe. We wear the cheap vinyl gloves from costco when we work with beets or pomegranite. Works out to about 14 cents a pair -and you don't have red fingernails!!!
