That's both evaporation and condensation. The hot water from the pot is evaporating, then the cold air is squeezing the moisture right back out of the air. The visible moisture is condensation, the opposite of evaporation.

it doesnt all evaporate thanks to gravity, you can here it plop a little bit, but the water molecules are spread out in thin air and they intsantly freeze since there is little to nothing in one given area, it takes longer to freeze larger things, and even at that, the middle wont freeze fast, but with these physics you can make your friends look unbelieving. :D

Well, it's rather "instant freezing", not evaporating, Pyogen is right. We did such experiments in school, especially nice when it was -25C. And even more intresting if you add some color in your water.

@pyogen Im very well aware that this is not evaporation. the water particles separate in the blistering cold, and freeze instantly into small almost microscopic icicles giving the illusion that the water evaporates into a gas. For the convenience of things, i called it evaporation.
