@lum2ina That's actually false. Coconuts, or any plant foods, don't contain cholesterol. Cholesterol is naturally made lipid(fat) in the liver of most animals, including humans. So by adding an animal product, chicken for example, you're adding cholesterol, but coconuts contain 0.
Made this yesterday and it turned out GREAT. I didn't think the sweet potato would work but it was a really nice element to include. Although I switched the cilantro with italian parsley because, well, cilantro tastes like ass. And I used one of those Japanese type eggplants hehehe.

I made this dish lastnight, I used a jar of 'green curry' instead of the blender mix, I added coconut milk and water and it turned out AMAZING -- fresh basil is a must!
why do you strain the fat? Is it only for "health" purposes? I eat all the fat I can get off of pastured chickens. Concentrated fuel, full of omega 3 and other good stuff, Vitamin D. Fat from factory farmed chicken is of course, full of steroids, antibiotics, nasty stuff, so yeah I'd skim it off too. Eat Grass Fed!

The murky green color would throw some people off. However, if they knew exactly what was in this dish most would love to eat it. After watching this video i believe the dish is absolutely delicious. Definately a southern way of cooking.

This looks wonderful and extremely simple. My neighbor (who is Indian) has encouraged me to branch out and try more Asian inspired dishes and this one totally looks like something I could do. I can't wait!

The murky green color would throw some people off. However, if they knew exactly what was in this dish most would love to eat it. After watching this video i believe the dish is absolutely delicious. Definately a southern way of cooking.
