This is very similar to how many varieties of ballistic missiles work. I think that they use nitrous oxide as the gas though, as it's easier to store and doesn't require topping off as often.

oxy-acetylene. The oxygen wouldn't burn on it's own, it needs a source of reduced carbon to oxidize. In the case of a welding torch, O2 oxidizes acetylene, in the case of this torch, the o2 oxidizes the sausage. The cucumber is just a good container that is minimally flammable because of its water content.

Aren't there pure oxygen blowtorches? Its not clear to me how much extra energy the meat stick are adding to the cutting. (Very cool just the same.)
