  • Good explanations, Jayson. However, why the emphasis on lean proteins? I'm sure you of all people know that we don't need to be fat-phobic. Especially considering that added fat will effectively lower the glycemic index of any food by slowing its conversion to sugar in the body. Granted, pastured meat is considerably leaner than their factory raised counterparts. So perhaps technically those are "lean proteins."
