Q: What is the yellow stuff inside a cooked crab? Some people call it "mustard." Is it fat?
A: Contrary to popular belief, the "mustard" is not fat, it's actually the crab's hepatopancreas, a main component of the crab's digestive system.
The hepatopancreas is a gland that functions as both liver and pancreas. It produces digestive enzymes and is responsible for filtering the crab's blood.
@jcbmnd11 YES, it is!!! Crab meat goes well with rice. Make sure you cook your crabs with some water and salt to taste. When seasoned right, you don't need a dip. (7/25/11)
My wife is a Pilipina and exposed me to these little buggers. I felt like an idiot having dinner with the family and eating whole crabs like this for the first time. Before, I would only eat the large king crab legs. However, mixing the inside of these crabs with rice is super delicious! When we open them up, if there are eggs, the wife grabs that one before I can blink. I better go before she sees me watching this. Otherwise, we're going to be on our way to the market for crabs.
@Biotoasts Illegal to eat? But are allowed to sell at the market? In what country? In what region of the world? We bought these female crabs at the local market here in California.
A very tedious task but it's worth. I loved crabs especially fresh from the market and cooked them right away. Ang Sarap Sarap. Thanks for posting. Salamat Po.
My mom used to get so mad when we'd throw out the little legs, but I felt that there was too little meat for all the work you did to extract it. The body, though -- some of the best stuff is in there! Well worth the effort.
Would you a 25 pound bag a month! Before I got married I only ate a small bowl of rice with warm milk and cinnamin (okie style), but now I really like to eat steamed rice, esp with vegetables, or with fish or chicken.
You are an amazing person Bud, 5 stars always on your vids. Thank you for embracing our culture and appreciating it, you truelly are a phillipino at heart.
Are you serious? I thought the gills remove all the googoo from the water (like a filter), but I didn't know people ate the gills. I guess it's no different from eating the gizzard from a chicken, which I do. Thanks for your comments.
let me remind you again that the crabs served at the SF piers are HUGE. SOOO much yummy meat to be eaten. If you're on a budget but still want to eat the same crab, i know that wholesale warehouses there like sams or costco sell them too a bit cheaper. now im hungry for some SF crabs. grrrr. now i'm frustrated from lack of good crab eatin. grrr to you max for this vid. lol.
cool vid magicmax. I love crabs but in my area of florida, our local crabs are small blue crabs. I save my crab appetite for when i go to the philippines or to san francisco. if you want a great crab experience in SF, go to the fisherman''s groto along the piers near by pier 41 (i believe it's 41. there is a burger king across the street) There you can get huge dungenous crabs for about 20 bucks each, but trust me, it's well worth it. get some bread to eat with the leftover edibles. yummy.
u threw away the best part of the crab when u were kid!!!! i just love peeling the crab open for eating....sobrang entertaining....and so is the music in the background of this video....makes me dance....hahahaha
I've never actually had the chance to eat a crab, just the bland meat from containers, but this looks a lot like when you eat a lobster so I think I might have to try something new when we go shopping for seafood next

I never really thought about it really. I'm not sure if anyone outside my family eats the gills, so maybe we're just a bunch of oddballs.
