  • Hi Chef, moussaka is actually a technique to combine eggplant/potato/squash/cabbage and ground meat to make a dish. Actually there are some discussions between us (Turks) and Greek that is claiming that moussaka is Turkish/Greek but actually the root of this word is coming from the Arabian peninsula, so probably we stole from them and Greek did the same to us..

  • Greetings from Greece! Yes, you're doing correct American pronounciation of moussaka (in Greek it's moussaKA, but when speaking English even I usually say mouSSAka)

    This looks great... a nice update on a classic and delicious dish! You get the Greek stamp of approval (from me, anyway).

  • I'd like to give those a try. Never tried Moussaka before, and only ever had lamb twice that I can remember (I liked it though). The tomato/mint combination sounds really interesting.

    I have tried this but it didn't work for me I don't why!! When I put the grounded beef on the pan it separates apart (the beef didn’t stay together) may be because I washed the grounded beef and there is still some water on it!

  • Dude, lamb costs more than steak in these here parts. Most supermarkets have a very sparse selection at super-inflated prices. Neck pieces for $5/lb!! Will try recipe when prices come down.

  • how do you keep the burgers from shrinking while cooking? When I make burgers i have to make huge patties and they still come out to be thick

  • @dhuntermilk the lamb probably has a very low fat content. Fat is what makes meat shrink, so less fat means less shrinkage.

  • @deadman903 The reason for his choise is quite simple; the result of pan frying the meat contra grilling the meat is huge, the meat is twice as juicy when panfried, it is correct he could make the burger even better by blitzing it on the grill so it gets a mildly smoky flavour.. however, only grilling the meat results in a drier burger.

  • @WoodyMathias what are you talking about? i have burgers like 3 nights a week on a grill in like every season but winter and when you grill it you just wait so all of the juice is on top filp it with 2 minutes put cheese on wait 30 seconds and your done a perfectly juicy medium rare burgers and if you dont feel like making them then buy bubba burgers

  • @deadman903 Dude it's science. On a flat top the paddy cooks on in it's own fats which prevents the moisture from leaving the paddy.

    When I was younger, I used to grill everything much like you're suggesting. But with age, my tastes have refined and I find that I'm grilling less and less and using the stove top and oven much more often for better temp control.

    They're right. A flat top cooked paddy tastes better.
