He's resetting the ink level to full for all the cartridges. That way you don't waste as much ink by resetting each one one at a time since every time you replace a cartridge the printer goes through a purging/cleaning cycle for all the inks which wastes ink on all colors.
I do not get it either. Would be great if he explained it.
