i know you might not care but soy is not the health food it has been glamorized to be. I go for soy free dairy free. Your body will thank you. Obviously better than what most people put in their bodies these days but soy is usually processed, modified and filters poorly in the human body.

omg this look soo f**king good! I am soo gonna try this out.. I checked out the website for Gracias Madre and the quesadillas are actually made w/ sweet potato, caramelized onions and cashew 'nacho cheese' and pumpkin seed salsa not butternut squash. But i believe butternut squash looks much butter. I think I'll try both sweet potato and butternut squash cuz they sound delish :D Excellent job tofu guru, you rock!!!

Don't worry too much about the name, in southern Mexico the 'quesadilla' itself involves no actual cheese, you have to literally ask them to add cheese in them. My favorites are the pumpkin flower quesadillas and epazote quesadilla, with no cheese ;)

Thanks for the diclaimer. I think what makes many non vegans upset is when they taste vegan food and are told that it taste just like cheese, or worse, chicken. Vegan food can be delicious but it can totally ruin it if you expect it to taste like something else

these look so good. i never had the chance to try the quesadillas at gracias madre, but i might try 'em now with XgfX tortillas. if you bake a seeded butternut squash in chunks, the peel comes off pretty easily--you'd probably save yourself an entire hour of prep work.
