Do not listen to angry Italians who complain about the butter. I am from Rome and can testify that many restaurants here put a little nob of butter even in sauces that traditionally do not require it. It is because, they say, butter has the power of fusing all flavours harmonically, and it adds a bit of umami too. Surely, it should be just a bit of butter, not a giant chunk. And do not forget: puttanesca owns its name to "facci una puttanata qualsiasi", or "prepare us any crap you want". [...]
seem`s good...but sorry we don`t use butter in our sauces...it really don`t need it after olive oil...its enough....too much greasy and heavy....why you americans put butter everywhere ...its no healthy.....and fresh tomatoes absolutely...please....xxxoooo...simona.
Americans crack me up.....they eat all kind of fattening food and then worry for a pinch of salt. Let's have a cow as long as there's a diet coke to go along. Anyway, puttanesca is made with 1 clove of garlic that got thrown out when it starts changing color and fresh chili flakes. Then we lower the temperature to have the anchovies melt, add olives and capers. Most important...use tomato filets and not the canned one. Sprinkle some fresh parsley at the end (no oregano and basil)
Thanks for the memories! Had many dinners at Michael's. Can't find a place like Michael's here in Dutchess Cty. Sure do miss Brooklyn and Dyker Heights!
