Oven should be at 375, and cooking time will depend on the size of your cookies. Smaller cookies perhaps 12-15 minutes and larger cookies up to 22 minutes. Are they sticking to your rolling surface or your pan?
Drying depends on weather conditions + the amount of cream of tartar. The more CT, the faster (but harder) it dries. Even so, overnight drying is best always with royal icing.

Hello! I've just seen your response... best thing to do is cut out the shape in the size you want, mount it onto heavy paper (like a postcard), lay the shape onto the rolled out dough, and trace around it with a small, thin knife. You have to work fast, though!
My oven doesn't have a window either. Usually they take about 20-25 minutes, but you'll have to check, depending on how big your cookies are. My cookies are big, so they take a little longer.
When you put the cookies in the pan do you have to put spread butter in the pan? Or just put the cookie on the pan and after it has been cooked you barely move it?
You do not need to butter the pan in any way. Just barely move the cookies on the same pan they've cooked on while they're hot, and let them cool on that tray. Hopefully you have a few trays!

You cannot wrap butter cream frosted cookies. Royal icing is the perfect solution. And yes, quite edible and delicious.

The dough should still be fairly cold when you roll it out, so a little stiff, and the stick just goes right in, no problem.

The cookies are just under about 3/16" thick. They have to be thicker than the thickness of the stick, however.
