Of the umbrellas shown, the silver umbrella provides the most life-like and lively rendition, as clearly seen in this video. As you move to softer and softer modifiers, the image becomes more and more lifeless IMHO. It would seem that the only use for white umbrellas would be if one were shooting photos of an elderly woman who did not want to invest in post-processing.
You should tell people that this tube is 7mm not 8mm like most brolly shafts. Luckily Elinchrom provided a clamp on my 500's so I can use my large brollies in there otherwise I'd have to find brollies with a 7mm shaft.
You can tell i'm totally new at lighting... Dumb question. Looks like this is constant lighting as opposed to flash. What is the advantage - disadvantage of constant lighting compared to flash?
Monolights (what the umbrella is attached to) have two lights, a modeling lamp and flash tube. What you see in the video is the modeling lamp which is designed to give you an idea of what things will look like when the flash tube fires. I've used these monolights many times and it's very accurate. As for advantages and disadvantages, that's a pretty in depth question, however you'll probably find "flash" like this monolight more useful.
Thanks for the follow up email. I pretty much knew what he meant, I was just quite keen to see them used in this tutorial format as the Octa video was enough to convince me to buy it, even though I'd heard Scott Kelby rave about it. To be honest, it was seeing it put together that convinced me as my Elinchrom Rotalux is a bit of a pain to do when you've got children waiting for their portraits to be done.
I hadn't thought on the age (skin) to choose a silver o white umbrella, thanks ;)

i'd like to hear more about these other "accessories" that fit through the elinchrom hole. are we talking reflectors, or?

There are 'deflectors' like the ones for beauty dishes.
You can also use them on softboxes.
I'll e-mail a link with more info.
We'll do a video on this.
