I live in the French Alps (but am American) and the personalities of the people here are exact opposite to the Italians so this was wonderful to watch -all the joy and passion of your friends/family. 1. this guys is the only expert in cheese making, which is NOT an easy process.
2. he wanted to SHOW us in a stage kind of way how he works with milk.
3. it would NOT be hygienic if many hands were involved in the cheese making process. There would be WAY TO MANY BACTERIA involved.

The thing in the bottle was chhese-rennet, coagulant...I don't know how to explain, it's made of baby lambs' stomachs.
They are called BOCCONCINI, it's a typical cheese from souther italy, from Apulia (the heel).
