  • 1. this guys is the only expert in cheese making, which is NOT an easy process.

    2. he wanted to SHOW us in a stage kind of way how he works with milk.

    3. it would NOT be hygienic if many hands were involved in the cheese making process. There would be WAY TO MANY BACTERIA involved.

    That man is our good friend and he is the expert in cheese making. He needs to do all the work, too many hands mean too many bacteria. Moreover we did help him. What you noticed (the camera thing) is just the "italian way" of showing off and having fun.

    yes, it was a great evening, that one. My friend loves doing cheese.

    The thing in the bottle was chhese-rennet, coagulant...I don't know how to explain, it's made of baby lambs' stomachs.

    They are called BOCCONCINI, it's a typical cheese from souther italy, from Apulia (the heel).
