It doesn't mean the carp is alive if it's still moving, it's just the nerves. (I'm not saying this can't happen, but those guys are professionals, mostly.) My great-grandpa was preparing a carp once and suddenly it jumped off the table - the thing was the carp got its head cut off like 15 minutes before the incident.:)
