  • Hello ChefBitoy! When you roast it in the oven, do you roast it right away or let it stay for a while before roasting? And the oven temp (200 - 180) is it in Celsius or Fahrenheit? Many thanks!!!!

  • @ChefBitoy I added pepper and seasonings to the salt for the rub and also for wood chips we used coconut husks. I also added an additional hour on smoking and roasting. It's so good. The fat part melts in your mouth and the fleshy part is really tasty and not dry. We're letting it cool down now before slicing it up. This is something really special for a really special occasion. Really really good. :D
