In the UK we generally use a chocolate syrup. I'm not really one for a mocha though - I've never really tasted one. If I was to do it.... I'd simply make a hot chocolate and add an espresso shot.
I generally make a hot chocolate by steaming finely ground milk chocolate with milk.
I use powder chocolate but let the whipping motion of the steam mix it, rather than have to mix it first. Also I just use the mug I'm going to be drinking it in as this saves washing up more things! :D

This is really helpful - it's good to know that there isn't one right way to make one. I know I'm going to be really crap for the first while so I hope they're patient!

It seems you can never have too much coffee flavor in a mocha. I've been getting a black cherry flavored mocha almost every Thursday when my mom takes her Mercedes in for a car wash. They have a coffee bar at the dealership with a barrista and she makes drinks on a large semi-auto that better that of Starbucks by far especially with a syrup that Starbucks normally does not stock.

i like adding the ghirardelli chocolate with a little sweetened condensed milk. I find with steaming chocolate milk I need more espresso.
