Hi, I'm learning German too (4 years completed). Usually when instructing people on how to say basic phrases like the ones you were using, I would usually say, "Man sagt" for "One says" instead of "Wir sagen" for "We say". I guess both would work, but I always think of "Man sagt" to be more instructional.

Frankly, your German isn't bad at all. I am German. Sure you've got an accent but it's not as strong as that of most german-speaking Americans. The only mistake I noticed is that you asked "Und du?" after you said "Es geht mir gut, danke". You have to ask "Und dir?".
