  • I'm part Cuban I did the recipe Keith and we love the extra coconut flavour if I can't taste the nutty flavour and the spice with shelly fluffy rice it aint rice and peas and that lil sugar to bind it all mmm ohhh man. I even lik the bacon in my ackee n saltfish whooo

  • I make rice and peas all the time...never used bacon but i can see where that would be a nice addition to the flavor

  • Huh! bacon in rice and peas! I would say this ia a variation of rice and peas rather than a traditional recipie, never seen it cooked with bacon in all my life...and i have spent a lot of years vsiting Jamaica and I have Jamaican parents, and my Jamaican Aunt is a Chef, never had it like this in anyone's home and never seen it being prepared this way. Although I do appreciate that each family or district has their own way of doing this.

  • @Mackiemoomoo the traditional way is to add salted pigs tail,or salt beef(cured beef navel)..this dish traditionally was a one pot meal..at Christmas time ham skin and pieces was used,also instead of red peas we used gungo peas(pigeon peas)...so using bacon is the modern (more convenient) way of getting the smoky/salty flavor to the dish

  • BACON GIVES RICE & PEAS SO MUCH MORE FLAVOR than the plain taste most Jamaicans are used to. & BTW there are many forms of bacon, not only pork..ie. turkey bacon. Thank you for sharing, this recipe is the best I've tried so far.

  • Well I loved it but I have 5 kids a husband 3 dogs and a day job, I gotta cook quick this takes way to much time. I tried it but the kids were like when it's ready! So I think I need to soak the beans before leaving to work that may cut some time down next time but great recipe.

  • Geeze Louise cut this guy a break. He is sharing his passion for food with you not writing history. So he uses bacon and calls it Carribean, anything not on a food channel is always someone's interpretation. That is how good recipes become great, someone dares to go off the page and add a touch of this or that. Now let's enjoy the effort, make some food and fill our bellies. LOL

You should stick to authentic coconut rice and peas. I can't see eating oxtail, or stew fish or stew chicken with bacon, rice and peas. come on, you spoil the whole a di dish. Play the music and an intro, interlude or exit please! LOL

  • My bad. Cubans do cook their rice and peas with pork. ButJamaicans don't. So ur right in a way when u say caribbean. But when it comes to Jamaican, remember that Rastas are a strong part of Jamaican culture and this would exclude them from one of the Jamaican foods they can enjoy with everyone else. But again, it is caribbean and not Jamaican. But I still do think that sometines it is best to have simple and FRESH ingredients. I'm sure it taste great and u seem very creative with ur food but I

  • I have to say this is more like American rice and peas. Sometimes it is better to keep it simple and not offend a people's culture. Might as well have said it is rice and peas with a caribbean influence. Usually the water from cooking the beans is used instead of chicken stock and definitely no pork. Rice and peas should be able to be enjoyed by everyone and with the chicken and pork you make that a big no no.

  • wanted to try something new on my friends and i've pretty much masted curry chicken but with regular white rice. a lot of my friends would always ask where is the rice and peas but since i'm not a rice and peas eater i would stick with what i knew; this time i turned to youtube, found you, printed the recipe, and had to come back and subscribe and comment because my friends loved this!

  • Forget about all these haters who nit pick because your recipe or naming convention is different from theirs. Your recipe is slammin' and so is the video. Very informative and entertaining also. I followed your recipe to make my rice and peas and it came out awesome.

  • I hope you know this is NOT W.I. peas and rice. I am African American and have had plenty from my Jamaican and Trinidadian friends. YOU combined two styles of cooking together: W.I. and Southern styles - looks good tho'

  • Keith you have to make the cow foot it taste like the oxtail, you will to use the curry powder instead of the browning

  • The Haitian way of cooking this is just a little bit different ( No bacon and sugar ) but its delicious every time i have it. I'm about to eat some right now

  • This is the general way across the caribbean, but definitely not authentic way of jamaica. We dont use chicken broth and pork, that would make most rastafarians come after you lol. You seem so happy in the kitchen, a happy chef makes good food. But like your style, good tutorial.

  • @MsTreysongz1 No this is not the Jamaican way at all with bacon and sugar. I think this is how people from Barbados cooks rice though. Looks ok I give it a try minus the sugar.

  • @williams0530 of course there is. you can omit it if you like, or use turkey bacon, or a small piece of salt pork or beef. but then you wouldn't add any salt to the pot. :-D
