How far forward were you sitting? You can hear the autopilot disconnection at 2:55.

Although the autopilot was disengaged,
They were still flying the plane long before that.
They just dis-engage the Altitude Hold and the Heading Hold. The Auto-Throttle is engaged until the very last second.

they were probably using app mode which holds the glide slope and localizer until the minimum visual ability where you hear them disengage autopilot
Typical of a Airbus Pilot.
Airbus planes are almost entirely controlled by computers. Rather then a Boeing,Which requires a little more user input,So I always say,The Airbus Pilot's cheating,And the Boeing pilot has a blast.
