We generally cook slices of the sweet potato in a mixture of OJ and a tiny bit of brown sugar and starch to thicken.. oh and of course butter. It's really good :)
@cartouchator actually milk and butter ARE healthy when included in moderation. It certainly beats out partially hydrogenated vegetable oil by a LONG shot. in terms of health Not only do milk products provide valuable calcium and vitamin D, but your body actually needs some fat in order to work properly. I use skim or 1% milk when I cook so that the fat content overall is less while the nutritional value remains high.
@cartouchator Buttermilk is actually considered healthier than real milk; usually it has very little fat (because it was removed to make butter) and it's high in lactic acid, making it much easier on the digestive system than milk. It's also high in nutrients like Vitamin B12 and calcium. As for butter well...I use a lot of olive oil as a butter-alternative personally. But it's true that in moderate amounts, butter has health benefits too.
@ubermystic sadly, yes. Growing up my school cafeteria always added TONS of brown sugar and marshmallows to it. I actually thought I hated sweet potatoes because of it. It wasn't until I tried plain mashed sweet potatoes at a fancy restaurant as an adult that I realized it was the way they were prepared that had me thinking they were sickly sweet.

Chef John, I am abolutely amazed at boiling the sweet potatoes instead of roasting them in the oven. Rubbing the sweet potatoes with olive oil and cooking them in the oven brings out their natural sweetness, are very easy to peel and are fork mash tender when done. All together much less work and a tastier result. Cheers! I'm going to try the pistachio topping though. Looks yummy!
@redherringbone other than when you boil them with salt...really brings out the natural flavor and of course you have just used up olive oil and still have to peel..and still have to wait for them to cool down to do that peeling and then you have the pan that is to be cleaned ...and....and...no I think his way is way better...sorry good thoughts though!!

@OrangeCountyBeauty No, those are sweet potatoes. Look it up, they are labeled yams to tell difference between the firmness but it's you're actually eating a different type of sweet potato, not yams. Yams are native in Africa and the taste COMPLETELY DIFFERENT from what we Americans call "yams".

In your mashed potato video you said to cut the potato in half rather than in chunks. -- You said it would cook more evenly, which seemed to be true when I tried the (delicious) recipe. Is there a reason why you chose chunks here?
@jcootch the idea of that video was, what i believe, to achieve perfect, lump-free fluffy mashed potato, here he is baking it and mixing it with a lot of wet ingredients so i imagine the idea is kinda invalid in this recipe :)

In your mashed potato video you said to cut the potato in half rather than in chunks. -- You said it would cook more evenly, which seemed to be true when I tried the (delicious) recipe. Is there a reason why you chose chunks here?

@jcootch the idea of that video was, what i believe, to achieve perfect, lump-free fluffy mashed potato, here he is baking it and mixing it with a lot of wet ingredients so i imagine the idea is kinda invalid in this recipe :)
