  • Made this yesterday, it smelled amazing while in the oven. Creaming the butter was killer on the arms but it was all worth it. Mine came out with a really crunchy top which made it even better cause it was like crunchy caramelised sugar.

  • So, I just doubled this recipe and put faith into Chef John this banana bread would be a winner...and boy am I glad I did!! I had 8 super ripe bananas, and decided to give this recipe a try. My loaves just came out of the oven, and I sliced one of them..so moist, so light, but- ever so slightly decadent. I recommend everyone to try this recipe, even my grandma loved it!!!!!! And she's one to stay away from sweets. Perfectly sweeten and balanced, (: GO CHEF JOHN!!

  • @susankohistany they make vanilla now that doesn't have alcohol in it.

  • @susankohistany Go on Amazon or look in a local, good quality grocery store, and find yourself some 'Vanilla Powder'. It's not made with alcohol and serves basically the same purpose

  • Mine is in the oven!!! HOWEVER after I smashed my bananas and mixed my butter/sugar combo I realized I only had 1cup of flour mmmmmmmm what to do??? I could get dress and run to the store! But NOPE don't wanna do that... So I got a 1cup of instant oatmeal and turned it into flour. BINGO my flavor will be different but it should still be some awesome bread! Oh I added a teaspoon of cinnamon as well. No nuts, so a tad bit more chocolate. Thank you =)

  • Hi Chef John! I baked this today using slightly overripe bananas and skipping the chocolate chips. Yum!!! On the outside it looks just like your bread in the video, but inside it is a light grey-brown instead of the lovely golden color of your bread. What could account for the color difference?

  • i went with half macadamia nuts half walnuts, and i must say i was somewhat skeptical about the random chocolate addition but it actually added a delicious zing to the banana bread! Other recipes tend to end up dry or overly sweet, however this recipe filled my home with a pleasant aroma, and gave me a moist/fragrant banana bread with a subtle sweetness that compliments the irresistible flavor. (im munching on a piece as i type this lol)

  • I tried this today with the recipe he had except i used 2 1/2 cups of flour cause it looked watery to me after the mix. The chocolate chips give the banana bread an extra kick. Chef John is the man!

  • I just made this, but I didn't have a 9x4 loaf pan, so I used two 6'' round pans. I failed horribly because I didn't know how long to leave it in there so I checked at 20 minute intervals. When I thought it was done I checked it with a toothpick but I couldn't see if it was done or not so I DECIDED IT WAS DONE. I waited for it to cool and took it out and it broke apart (not to mention it was raw lol) so I put it all back in and baked it some more. It's good, but mine looks ugly xD

  • @norlic Don't give up. Try again. Mine came out amazing and i used a larger lasagna type glass pan thingy. lol. Mine took about 1 hour and 25 minutes. Eating it right now and its amazing.

  • You mention tuna melts. Do you have a recipe for this? Mine is pretty straight forward and simple - toasted english muffin, tuna salad mix (usually just mayo and some salt/pepper for taste), and a slice of cheese melted over top.

  • Is there a way to make this diabetic friendly at all? My dad and I used to eat banana nut bread together before he was diagnosed, and I really miss it. The recipe looks delicious, though!

  • @IceFlower162 I'd personally recommend a couple of changes:

    1) replace the cup of sugar with 84g of Truvia (1/3 cup + 1.5 tbsp)

    2) bananas are high in fructose, so cut the recipe down to 2 bananas instead of 3.

    3) dark chocolate is rich in flavonoids, which can actually help manage your blood sugar. Because the chocolate is so sparse in this recipe, and research has shown benefits to including dark chocolate in a diabetic diet, I would keep that part of the recipe as is.

  • @TtonyArra Oh and one other note: I believe semisweet chocolate is just dark chocolate with half the sugar, so semisweet chips might be a better option.

  • @TtonyArra Fructose isn't dangerous and bananas is not high in them. 50% fructose, 50% glucose.

  • @OrginalKork That's not true at all. For a while they recommended foods that were high in fructose as an alternative sweetener, but as of 2009, nutritional scientists realized that fructose can cause just as much damage as glucose to diabetics and non-diabetics alike. The reason it's preferred is because it's sweeter than than other types of sugar, and thus requires less of it to sweeten food. And bananas are high in total natural sugar, over 12g combined fructose and glucose when just ripe.

  • Just made this this morning, just needed a bit more sugar like 1/4 cup... i guess it also depends on how ripe your bananas are, the riper the bananas the sweeter they are, as well as the chocolate chips

  • Thanks for the great banana bread loaf chef john. Made it here in Australia yesterday and it was amazing. The first thing I have ever baked. Surprisingly it is so much better the day after I made it.

  • Jeez man... It's like you were reading my mind! I was just thinking of banana bread, and here it is, a recipe right on my subscriptions list.

  • One other pro banana tip besides let them get ripe (where the skin gets thin and they're just about to ferment) is to freeze those 'nanners'. Something about freezing them, perhaps rupturing the cell walls, makes them taste more "banana-y" and easier to mix. Just cut the tops and squeeze them out like toothpaste. They'll look ugly - and taste delicious.
