Size of kit just gives more range for creativity, but the creativity can still exist on a 5 piece kit in the same way. Each cymbal can get about 4 or 5 different sounds depending on how you play, and each drum can get about 4, hi-hat has a lot like 6 or 7 ways of hitting it. For the drums there's rimshot, straightshot, rebound rimshot, blastbeat, and even playing on the edge of the head gives a different sound. Drums are great for this type of stuff.
