On a setup like this most of the CPU, RAM, and Video is processed by the Client and not the server.I would say the the server will need an additional 150mb per client. The clients will need the same RAM, CPU, video as normal for the applications but nothing else. My best guess is you will need up to 256 - 400mb RAM (normal usage) on the client side with any video and minimal CPU.
Just curios. Are you using seamlessrdp installed on the windows box to allow seamless rdesktop?

Ubuntu 10.04 comes with internal chat build in. It works well with LTSP fat and thin client setups.

Yes, There shouldn't be very many differences between installing on Ubuntu and Linux Mint.
