This guy is full it. 1) It's called carving not butchering, 2) the bird was sitting breast down and you started at the spine 3) if your great chef knife cant cut a chicken it's not worth having. Try a nice carbon knife.

I stand corrected on 1 point I went back and looked at the video again and you're right you did butcher that bird.
