Def thumbs up. Not a bad recipe, it comes out pretty good.

If you leave out the jalapeno, use a green bell pepper instead of the red, and use powdered rosemary, some thyme and powdered fennel seed in place of the chili powder and cumin, you can get something sort of Italian sausage-esque.

I'm ovo-lacto-vegetarian, not vegan, so I add a couple beaten eggs to get the finished burger a bit firmer. But the base recipe as given in the video does work well too.

@barbageddon I googled "gluten-free seitan", and the best recipe I found called for 1/2 cup each of rice flour and bean flour, and 1/4 cup of tapioca starch to replicate the VWG texture.
