Looks yummy, but you should pre-cook the pepper by roasting it 20-30 minutes otherwise it's pretty much raw. Which isn't a bad thing but a stuffed pepper should be softer than that,

Hey Jill! if you wanted your pepper a little softer what I usually do when i make them is nuke the peppers with some plastic wrap over them for like 5 mins it softens them up a lot and makes it easier to cut and eat plus the skin peels off afterward. If you wanted to get fancy you could even roast them in the oven till the skin darkens up. good stuff!

I'm neither a vegetarian nor a vegan, but I have started to cut down the amount of meat I consume (only two 'meat days' a week, max.), simply to have a healthier diet.
So, YAY! for vegetables and thanks for an interesting new recipe! :)

Actually, I have a guacamole stuffed pepper recipe that could translate quite easily into becoming a vegetarian meal. All I would have to do is replace the beef with said veggie burger stuff.
Was this done at your place? The kitchen looks great! Is the rent the typical murderous city rates or did you get a deal on it?
