Just wanted to great video! Murray does make some of the best knives. The core of your knife Aogami Super (YSS) which is actually an incredibly hard steel, which is why it's sandwiched in between the soft stainless steel outer layers. The steel will oxidize (patinazation) or corrode (iron oxidization) if left to the elements or moisture, but you're right, a brief moment on the stones and it is solved incredibly quick. Also look into a compound called Clean Power - for carbon steel knives.
