I always hear different cook times for shrimp. Does anyone know the actual cooking time?

I've always used the rule that once the first shrimp floats to the surface, take them off the boiler and shock them in ice water to keep them from cooking out.

(Although, I imagine sticking them in cold water probably robs them of some of their flavor if you're boiling in herbs)
