chorizo sausage would be awesome in perogies if you grind it up small enough. a lot of people just fill the perogies with a mix of cheddar and potato stuffing, no onions or bacon at all. many people save that stuff for garnishing on the outside.

is it alot cheaper just to make them instead of buying frozen?...i pay about $3.50 per bag.
and i eat alot of em,i go through about 4 bags in 1-2 weeks just snacking.

You can use whatever you want. I've seen people put prunes in them. Sausage might actually be rather nice.
