You note that Jicama holds a lot more water than potatoes... I'm just wondering, if you fry it or deep fry it, is it possible to actually brown this stuff and get that fried crispy texture, or does the extra water in the vegetable keep it from browning and crisping up?
@Ultimist It's already crunchy because of all the fiber in it, but if you cook it long enough it will get crispy (and *much* smaller) as the moisture cooks out of it. This happens, for example, if you cut it into thin slices and then fry them like potato chips.
@Ultimist I recommend that you use turnips and you can fry them and they brown just like french fries or hash browns you should give it a try! I have used it and it is good!

Thank you! I agree with you about Cauliflower! I have never found it to be a good subsitute for potatos, but I do like it instead of rice... I have made a few really good recipes with cauliflower, but I have never found it to be a good substitute. I will try this! Can you use jicama for 'mashed' potatoes?
@AmyCelticProductions I don't know how you make the mock mashed potatoes with cauliflower, but the way I do it is steam the cauliflower, then put it in the food processor, or with a potato masher add cream cheese and a little butter and salt and pepper it is delicious, try it, you won't regret it.
