Well something must happen when it grow to an adult which takes its flight abilities away.

Chocobos can hover, but they're too heavy to fly once they become an adult. Prolly all the additional junk in the trunk.

More like for the 20 first hours of the game. Vanille and Sazh are mostly always together, it seems.

Just a guess...might be completely off. Sazh wants to go find out what led to his son's death, and Vanille, trying to keep him away from leaving her, tells him that she knows about the incident.
