  • Your potatoes look good! I cook fried potatoes with garlic, onions and shallots all of the time! (One of my fav foods! LOL) As far as the goose fat for me though? Ummm....nah!!! LOL I just use either Canola or Peanut oil now. My mom used bacon fat when I was little though and it made potatoes taste awesome!

  • No formal culinary training, though I dream of it someday. I do read literally thousands of cookbooks and have quite a library covering all ethnicities and lots of techniques, so that helps. Mostly, I really do "love to cook" and I do it every day ... I am very glad to be able to share this passion online.

    You -are- homegrown, right? As in, you have no formal culinary training, I think? Regardless you clearly have both practiced skill and innate talent.

  • Maria, I was wondering if there is something else you can use in the place of the goose fat? Are the potatoes very hard, when they are done? Do you cook them for 5 minutes on both sides? Thanks for all the great recipes. Tina

  • You can use clarified butter (or ghee). The potatoes should NOT be hard, crispy on the outside and soft and tender on the inside is the goal. My cooktop has a very intense flame (very high btu's) so if yours doesn't cook them longer than the times I give, play with it - you don't want to burn them but you do want them cooked through.
